As a continuation of this, I recently discovered the UCLA Phonetics Lab Archive and they have a few recordings of Irish speakers (all but one of them native, as far as my ears can tell) reading lists of words to demonstrate Irish phonology. These are student projects so the IPA isn't always accurate but you could pull a number of minimal pairs from them.

Thanks for that Gearóid! I've been meaning to work on this but am currently busy with Irish courses from 9:30 - 16:00 so I'm usually drained by the time I get home. Hopefully I can hop on it soon, when I have a few weeks down time.
