In what way can a piece of gristle "éirí chút"? I could interpret this as "come across in beef", but éirí chút doesn't mean come across, but rather that the gristle rises towards you???

Like you said, it could mean “come across, turn up, find . . .”

The other translations for that phrase seem to have the nuance of something strong or disagreeable. Maybe it’s a way to express that although I haven’t found it anywhere. The closest thing is in FGB where I searched “éirigh chuig” and the item “find” where it doesn’t quite have the same grammatical pattern: a guy finds himself in a meeting.

Searching De Bhaldraithe you find “stand out” as well.
