We have water dragons where I live, which I’m thinking would be dragain uisce. Please correct me if I’m wrong.

There is another word for water in Irish in this sort of context and that's - dobhar, so for example, if you looked up the word for an otter in Irish on Teanglann, you would find that it's called - dobharchú - which means a 'waterhound', so perhaps you could call your waterdragon - dobhardhragan, but what is it ? some sort of dangerous Australian fish ?

That's a good suggestion. The expression dragan uisce is ambiguous, and could be read as referring to a dragon made of water.

I've just looked it up - it's the generic name for a specific group of Australian lizards. There are two words for a lizard in Irish - laghairt - and - earc luachra (of the rushes) though this can also mean a newt, and there's frilled - rufach, monitor - mhonatóra, sand - ghainmh, and not to mention of course - leadaí teach tábhairne/learaire leanna.
