Since it's down to parishes now, how many would it be in the whole country? 10, 12? Less?

I don't know about nationally, but these are the local parishes.

In Tuam dioceses
http://www.tuamarchdiocese.org/category/parishes/
5 with strong Irish=
An Cheathrú Rua
Cill Chiarán
Carna
Árainn
An Cnoc/Indreabhán

someplaces like Achaill have pockets of Irish too.

In Galway dioceses
http://www.galwaydiocese.ie/parishes
2 with strong Irish
Leitirmóir
Rosmuc

Irish but to a lesser extent =
An Spidéal
Barna
Maigh Cuileann
(much lesser)

(Also someplaces in the city have a tradition of Irish, or at least used to have, because Conamara people moved there.)

There would be eleven (you could say twelve, possibly) in Munster. Seven in Kerry, three (possibly four) in Cork and one in Waterford.

There are two in Waterford, Rinn Ua (Ó) gCuanach and an Seana-Phobal.

I'm familiar with Munster Irish/ Gaolainn na Mumhan (GM) and the Official Standard/an Caighdeán Oifigiúil (CO)

It would be interesting to know the names of all of the Munster ones too.

There is actually one more in Kerry than I thought.

Paróiste Mhárthain, Paróiste Mórdhach, Paróiste an Fheirtéaraigh, Paróiste Dhún Urlann, Paróiste na Cille, Paróiste Dhún Chaoin, Paróiste an Daingin and Paróiste na Prióireachta in Kerry.

Paróiste Oileán Chléire, Paróiste Bhaile Bhuirne, Paróiste Inse Geimhleach and possibly Paróiste Chíll na Manach (some older people who would be semi-speakers) in Cork.

An Cionnfhaolach has Waterford above.

For the Munsters ones it would be difficult to say, some would be around 10%, others near 90%.
