This web site gives it as Tá sinn ocrach. I don't understand how ocrach could end up as "ukrosh." Maybe someone had a speech impediment, or the person who wrote down the phrase didn't remember it too well.

Edit: I just noticed that Lughaidh already brought up Tá sinn ocrach.

Scottish Gaelic speakers would normally express it in essentially the same way as Irish speakers: Tha an t-acras oirnn
Tha sinn acrasach would be a direct translation from the English, and just as non-standard as it is in Irish.

As for Shelta, my understanding is that the many Gaelic words in Shelta are usually disguised by reversing syllables and things of that nature, to make it a secret language.
