I'm looking to get a couple of things translated from English to Irish.
I've tried the internet searches but are coming back slightly different.
"My Father, My hero "
And
"My Mother, brave and beautiful "
It's for a tattoo so needs to be exact.

Assuming you are talking about your father and not to him, this should work:

M'athair, mo laoch

For the second one (again, assuming you're talking about your mother):

Mo mháthair, cróga is álainn

Wait for confirmation.

That is exactly how I meant it.
The only difference is for the second one
I got :
Mo mháthair, cróga agus álainn as opposed to is álainn
Could you tell me what the difference is?

"Is" is a shorter and more natural way to say "agus" in this context.

Can't you delete "and" completely here between adjectives?

mo mháthair chróga álainn = my brave and beautiful mother

mo mháthair (atá) cróga álainn = my mother (who is) brave and beautiful

That happens for grammatical reasons. "Máthair" (Mother) is grammatically feminine, so the adjective modifying it will be lenited or "softened" if it begins with any consonant other than l, n, or r. This is indicated by writing an "h" after the consonant in contemporary orthography, or by writing a dot over the consonant in the older writing style. Adjectives beginning with vowels, such as "álainn," aren't affected by this rule.

So, if you were speaking of your father, it would be

M'athair cróga

But for your mother it's

Mo mháthair chróga
