Kind of amazing, isn't it, than many different food products that can be made from milk? When you consider even just the many very different kinds of cheese (and even without considering the various cheeses made from milks other than cow's milk)...it's mind boggling!

For curds and whey I've found meadhg agus grutha and for curd cheese - which is what I think la faisselle must be - cáis ghrutha. In the Jura (near the Swiss border - where we'll be off to tomorrow) they make a kind of cheese from the whey called sérac or serra - perhaps in Irish this would be uachtar meidhg or meadhg bán.
