I can't think what could fit into the middle gap. I am presuming it is a set phrase '___ rud é', but can't think what it is.

It's ós; that's the spelling I think.

yes ós [ó + is] rud é. ós has a síneadh fada here unlike os cionn/os comhair which don't have a fada usually, except that they do as variants just to keep things from getting too simple!

ag dul ag múinteoireacht .... yes this works, but it's not what I had in mind.

A nice turn of phrase is: ag dul le múinteoireacht. It's what you say when referring to the so-called caring professions (although not exclusively so) that end in ---cht. Ba mhaith liom dul le dochtúireacht / dul le sagartóireacht.
