Saghas probably comes from "size", and its meaning has changed in several dialects but has kept its original meaning in Connemara? I don't know.
I don't think "saghas" is used in Donegal - people say "cineàl" to say "kind of" and "mèid" to say "size", as far as I know.

"'Cén mhéid a chaitheann tú?'."
It can have that meaning too. You will probably know the meaning from context. For me that would be ambiguous.

Also "Cé méid ... " means "How many..?"

cineál/cionál - "kind". What kind of coat is it? Tá mé cineál(ín) fuar. (I am kind of cold. )

Aicme in Munster is used to mean a class or set of things, for example classes of nouns, animals, e.t.c. or social class, as you said.
It can also be used to refer to a group insultingly. An aicme úd that terrible group of people. Cineál is, as far as I know, a race
or ethnic group. Saghas then is just type in the generic sense.

Or more simply - Dúirt sé gur cárr é.

Also common as a question and also as a confirmation that you are listening to the conversation - "ab ea?" (a_ba)

gur chapall a bhí ann.
"Gurbh" is only used before vowels and lenited f.
