I'd like to get into classic Irish poetry/folklore. Does anyone have any recommendations on where to start? I'd to get both Irish and English translations.

I'll start by pointing you towards Cúirt an Mheán Oíche by Brian Mac Giolla Meidhre, and the various works of Antoine Ó Raifteirí. Unless you mean "classical" poetry, which represents an earlier stage of the language.

Can't get much better than "An Duanaire: Poems Of The Dispossessed", edited by Seán Ó Tuama and Thomas Kinsella. It has a mixture of most of the best stuff composed between 1600 and 1900 (some full pieces, some extracts) with English translations side-by-side.
