I don't quite understand the English part.

EDIT: maybe I should say, "attributed" to Martin Luther.

So he meant "I can't do anything else".
Maybe it wasn't translated correctly at the time, or English was a bit different then anyhow.

Would it functionally change anything to use "rud" instead of "tada" ... would that be the difference between "nothing else" (tada eile) and "anything else" (rud eile)?

Well you could also say -

Ní féidir liom aon rud eile a dhéanamh.

But it means the same thing. "Nothing else" may not sound as good, or incorrect even, in English but it is ok in Irish (and Welsh).

(In Conamara we say "tada" but in the Caighdeán it's "dada" AFAIK)

Maybe this will help a bit

In German it is usually given as

Hier steh' ich und kann nicht anders.
or
Hier steh ich, ich kann nicht anders.

For the first part I'd say "Bím i mo sheasamh" instead of "Seasaim", because I think (at least in Ulster), "seasaim" means "I stand up", not really "I stand".

Here that is translated as - "I can't help it" " I have no choice".

(although I'd expect a "macht" in there somewhere... Maybe it's a common German idiom, I have no idea )

I mo sheasamh is better than seasaim but if it is a single occurrence then shouldn't it be tá mé i mo sheasamh?

Tá mé i mo sheasamh anseo gan an dara rogha agam.
